Classic Almond King Cake (Galette des Rois)

  1. Bake. Preheat the oven to 200°C, then lower it to 180°C just before placing the galette inside. Bake for 35 to 40 minutes, until the pastry is fully puffed and evenly golden on both the top and the bottom. The galette should feel light when lifted and sound hollow when tapped underneath.

Chef’s Tip

For an even deeper almond flavor, lightly toast the ground almonds in the oven for about 10 minutes before making the cream. Let them cool completely before using, then proceed with the recipe as usual for a more intense, aromatic filling.

Serving

Allow the galette to cool slightly before serving so the almond cream sets and slices cleanly. Serve warm or at room temperature, and remember to warn guests about the hidden fève.
