Classic French Frangipane King Cake (Galette des Rois)

  1. Bake. Preheat the oven to 180°C. Bake the galette for about 40 minutes, until the pastry is well risen and deeply golden. The layers should be crisp and flaky, and the filling set but still moist.

Finishing Touch

For a glossy, bakery-style finish, brush the hot galette straight out of the oven with a light sugar syrup made from boiled water and sugar. Allow the galette to cool slightly before serving so the frangipane settles and slices cleanly.

Serving

Serve the galette slightly warm or at room temperature. Slice carefully and remind guests to watch for the fève. Traditionally, the person who finds it is crowned king or queen for the day.
