Extra-Fluffy Giant Omelette with Whipped Egg Whites

  1. Fold and serve. Slide the omelette carefully onto a plate. Fold it in half using the plate or a spatula; due to its thickness, it will not lie completely flat, which is normal and part of its appeal. Finish with freshly chopped chives or parsley.

Chef’s Tip

Serve immediately, as the omelette loses volume quickly once off the heat. For a sweet version, replace the salt and pepper with a little sugar and serve it flambéed with Grand Marnier, just after folding.
