3. Chocolate Ganache

  1. Heat the cream until hot but not boiling, watching closely to avoid scorching.
  2. Pour the hot cream over the chocolate and let it sit for 1 minute to melt gently.
  3. Add the butter and stir slowly until the ganache becomes smooth, glossy, and fully emulsified.
  4. Let the ganache rest for 10 to 15 minutes, until it thickens slightly while remaining fluid enough to pour.

4. Assembly

  1. Place the first cake layer on a serving plate.
  2. Spread a generous layer of cherry filling evenly over the surface.
  3. Repeat with the second and third layers, ensuring even distribution.
  4. Top with the final cake layer, pressing gently to secure the structure.

5. Ganache Finish

Pour the ganache over the top of the cake, allowing it to flow naturally over the edges. Use the remaining ganache to lightly coat the sides, keeping the finish smooth and fluid.

6. Decoration

  • Sprinkle with chocolate chips or shavings.
  • Decorate with fresh cherries.
  • For a dramatic effect, allow the ganache to drip slightly down the sides.
