Traditional Belgian Cougnou Sweet Bread

This traditional Belgian cougnou is a soft, lightly sweet yeast bread, often prepared for festive occasions. Made from a rich, buttery dough and shaped into its characteristic form with a central body and rounded ends, it is tender, fluffy, and delicately flavored. Pearl sugar, folded into the dough after the first rise, melts slightly during baking and adds pleasant bursts of sweetness throughout the crumb.

Ingredients

  • 500 g flour (T45 or T55)
  • 20 g fresh baker’s yeast
  • 200 ml lukewarm milk
  • 2 eggs (plus 1 egg yolk for glazing)
  • 100 g soft butter
  • 70 g granulated sugar
  • 1 pinch of salt
  • 100 g pearl sugar (and/or raisins)
