Traditional Belgian Cougnou Sweet Bread

  1. Prepare the yeast mixture. Crumble the fresh yeast into the lukewarm milk and add 1 tablespoon of the measured sugar. Stir gently until the yeast begins to dissolve. Let the mixture rest for about 10 minutes, until it becomes slightly frothy on the surface, indicating that the yeast is active and ready to use.
  2. Knead the dough. In the bowl of a stand mixer fitted with a dough hook, combine the flour, salt, and remaining sugar. Add the milk and yeast mixture, followed by the eggs. Knead for about 5 minutes, until the dough starts to come together and looks homogeneous. Add the soft butter in pieces and continue kneading for another 10 minutes. The dough should become smooth, supple, and elastic, pulling away from the sides of the bowl while remaining slightly soft to the touch.
  3. First rise. Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rise in a warm, draft-free place for about 1 hour and 30 minutes. During this time, the dough should double in volume, becoming light and airy. This slow rise develops flavor and gives the cougnou its tender crumb.
