Extra-Fluffy Giant Omelette with Whipped Egg Whites

  1. Cook the omelette. Heat a non-stick frying pan (24–26 cm) over medium heat and add the butter. Let it melt and foam without browning. Pour the airy egg mixture into the pan and gently smooth the surface with the spatula. Cook for 2 to 3 minutes. The bottom should set and turn lightly golden, while the top remains soft, mousse-like, and slightly wobbly.

    If you prefer a less runny top, cover the pan for about 1 minute so the steam gently cooks the surface without drying it out.
