Soft Chocolate Chip Cookies with Toasted Walnuts

  1. Cream the butter and sugars. In a large bowl, beat the soft butter together with the brown sugar and white sugar until the mixture becomes creamy and smooth. This step helps dissolve the sugars slightly and incorporates air, which contributes to a tender texture. Add the egg and vanilla extract, then mix again until fully combined and homogeneous.
  2. Make the dough. Add the flour, baking powder, and salt to the bowl. Mix gently with a wooden spoon or by hand, just until the flour disappears. Avoid overmixing at this stage, as working the dough too much would develop gluten and make the cookies tougher. Add the chopped walnuts and chocolate chips, stirring briefly to distribute them evenly throughout the dough.
  3. Shape the cookies. Preheat the oven to 180°C. Scoop portions of dough roughly the size of a walnut, or a golf ball for larger cookies. Place them on a baking tray lined with parchment paper, spacing them well apart as they will spread during baking. Press each ball very lightly with the palm of your hand to flatten it just slightly.
