Stuffed Turkey Roast with Mushrooms, Peas and Crispy Bacon

  1. Sear the roast: Heat the olive oil in an ovenproof skillet over medium heat. Place the roast seam-side down in the pan and brown it slowly on all sides. Turn it carefully so the bacon colours evenly without burning. This initial searing step enhances flavour and helps the bacon hold together during roasting.
  2. Roast in the oven: Add the fresh rosemary sprigs to the skillet around the roast. Transfer to a preheated oven at 180 °C and roast for 45 to 50 minutes. Baste the roast with the pan juices every 15 minutes to keep the meat moist and encourage even cooking. The bacon should gradually become crisp while the turkey cooks gently inside.
