Ultimate Chocolate Cherry Cake

Instructions

1. Cherry Filling

  1. In a saucepan, combine the cherries, sugar, cornstarch, cherry juice, and lemon juice. Stir thoroughly so the cornstarch is evenly dispersed and no dry spots remain.
  2. Cook over medium heat, stirring constantly, until the mixture thickens. The filling should become glossy and jam-like, with the cherries softened and evenly suspended.
  3. Remove from heat and allow to cool completely. As it cools, the filling will continue to thicken, reaching a spreadable but stable consistency.

2. Chocolate Cake Layers

  1. Preheat the oven to 175 °C (thermostat 6) to ensure even baking.
  2. Grease two 20 cm cake pans and line the bottoms with parchment paper to prevent sticking and ensure clean removal.
  3. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.
  4. Add the eggs, milk, oil, and vanilla, beating until the batter is smooth and uniform.
  5. Slowly incorporate the hot coffee or hot water. The batter will be thin, which is essential for a moist, tender crumb.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 35 to 40 minutes, until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool completely, then slice each one horizontally to create four even layers.
